生物强化富锌食品的研究进展

摘    要:生物强化是指在生物生长及其代谢过程中进行营养元素的富集以提高其营养价值。通过生物强化可将外源添加的无机锌转化为生物锌,获得的富锌食品具有安全可靠、易于吸收、稳定性强的优点。归纳总结了富锌食品的研究意义,对近年来主要研究的富锌茶、富锌食用菌、富锌酵母、富锌水稻和富锌果蔬等富锌食品的研究进展进行了综述,表明生物强化富锌食品具有安全稳定的特点,相比过去对于富锌食品的研究也有显著进展,以期为未来生物强化富锌食品的研究提供依据。

Abstract:Biofortification is the enrichment of the nutrient elements in the process of biological growth and metabolism to improve their nutritional value. By means of biofortification, the exogenous inorganic zinc can be converted into biological zinc to obtain the zinc-enriched food with the advantages of safe, reliable, easy to absorb, and stable. In this paper, the significance of zinc enrichment food were generalized. The research progresses in zinc-enriched food including zinc-enriched tea, mushroom, yeast, rice, fruits and vegetables in recent years were summarized. Compared to the past research of zinc-enriched food, biofortification zinc-enriched food are safe and stable, which has a significant progress and can be a reference for the future study of microorganism zinc-enriched food.
