摘    要:葡萄籽为葡萄饮料加工中产生的资源性副产物,含有丰富的亚油酸、原花青素、蛋白质等具有特殊生物活性和药理作用的功能成分,具有降血脂、抗氧化、清除自由基、抗癌等独特的药用价值和保健作用;超临CO2萃取技术由于"环境友好"受到业内人士高度重视;将葡萄籽超微粉碎后制成破壁葡萄籽粉的加工途径值得我们关注.

Abstract:The article analyzes the situation on research and utilization of grape seed in nearly 30 years,summarizes both technology of the extraction of fat and protein from grape seeds,the extraction of polyphenol substances and the application of pigment.The author pointed out that grape seed product development and utilization has important economic significance and broad prospect.
