摘    要:本文设计了冷冻鱼糜制造工艺,并用投资效果的动态分析法评估了以低值经济鱼类制造冷冻鱼糜的项目,揭示了一条投资低、经济和社会效益均好的综合利用低值经济鱼类的途径。

Abstract:In recent years, the general decline in major fish resources has resulted in an inerease in the reproduction of small, low-valued fishes such as Collichthys lucidus Richardson, Pneumatophorus japonicus Houttuyn, etc. Considerable economic and social benefit could be gained by processing these small fishes into frozen surimi, thereby enhancing their utilization value.The paper describes the technology of surimi production and assesses the economic advantages of such a project.
