| Abstract: | In recent years, the general decline in major fish resources has resulted in an inerease in the reproduction of small, low-valued fishes such as Collichthys lucidus Richardson, Pneumatophorus japonicus Houttuyn, etc. Considerable economic and social benefit could be gained by processing these small fishes into frozen surimi, thereby enhancing their utilization value.The paper describes the technology of surimi production and assesses the economic advantages of such a project. |
