摘    要:针对食品科学与工程类专业的特点和发展对人才的需求,以乳制品感官检验综合性实验教学模式、实验教学内容、教学方法和手段等方面改革为例,探索了实践教学的新模式,以培养学生全面掌握食品感官分析技术,具备解决生产问题和从事相关科研工作的能力,为学生今后从事生产第一线工作或从事科研工作打下坚实的基础。

Abstract:Taking the reform of the teaching mode and content and the teaching measures of the dairy sensory assessment comprehensive experiment as examples,this paper aims to explore the new model of practice teaching to meet the features of food science and engineering and the requirement of sensory professionals.Students have grasped food sensory analysis technique and mastered the abilities of solving the production problems and engaging in research work,which establishes solid foundation for students to engage in the front-line scientific work.
