豆腐乳降胆固醇作用的研究

摘    要:研究了豆腐乳作为食物蛋白源的降胆固醇作用.以ICR小鼠为实验动物模型,随机分成四组,以商业饲料为对照,其余三组分别用酪蛋白、大豆分离蛋白(SPI)、豆腐乳粉代替饲料中的蛋白源喂养ICR小鼠5周.结果表明,SPI、豆腐乳粉表现出明显的降胆固醇作用,而后者表现出更明显的效果.

Abstract:Hypocholesterolemic effect of the insoluble fraction of tofuru as a dietetic supplement was investigated. The ICR mice were divided into four groups, and fed ad libitum four kinds of feed, including commercial feed, and feed containing respectively casein, soybean separated isolate (SPI), and tofuru powder as protein sources. After 35 days of feeding, mice fed with SPI and tofuru powder markedly exhibited the hypocholesterolemic effect, and the latter was found more powerful than the former, thus indicating a promising prospect of the insoluble fraction of tofuru as a hypocholesterolemic food.
