| 摘 要： | 讨论了国内外水产界对壳聚糖产品标注的质量指标脱乙酰度的存在问题。提出了以壳聚糖含量作为产品的主要质量指标的意见，并对其测定方法进行了研究，这对我国建立标准化壳聚糖含量及脱乙酰度的测定方法具有十分重要的意义。
