金定鸭和南安鸭蛋品的蛋白质凝胶电泳分析

摘    要:用非解离和解离两种系统分别对金定鸭及南安鸭蛋品的卵清和卵黄的蛋白质进行聚丙烯酰胺凝胶电泳分析,结果表明:卵清和卵黄是两个相对独立的蛋白质体系,二者的蛋白质组成差别很大;卵黄蛋白质的亚基种类多,其大部分蛋白质分子由两个或两个以上亚基构成,而卵清蛋白质有些由多亚基构成,但其亚基种类较少;金定鸭与南安鸭的卵清蛋白质组成及卵黄蛋白质组成具有相近性,但也存在一定的种间差异.

Abstract:The proteins of albumin and yolk from Jinding duck eggs and Nananduck eggs were analysed by using polyacrylamide gel electrophoresis in nondissociative sys-tem and dissociative system,respectively.The results demonstrate that albumin and yolk aretwo separate protein systems,and their protein compositions show a great distinction. Theproteins of yolk contain many kinds of subunits and most of the protein molecules are madeup of two or more than two subunits,while the proteins of albumin,although some of themare made up of poly-subunits,contain less kinds of subunits,The protein composions of albu-min and yolk from Jinding duck are close with those from Nanan duck,but there are somedifferences between the two species.
