摘    要:测定了不同贮藏温度条件下不同荔枝品种中与褐变有关的部分生理指标:多酚氧化酶(PPO)、过氧化物酶(POD)、膜透性和呼吸强度.结果表明:低温有效地抑制了PPO和POD的活性,呼吸强度和乙烯释放受到抑制,较耐贮藏的“桂味”荔枝,其与褐变有关的酶活性较低,呼吸也较弱.

Abstract:physiological changes of different Litchi browning were determined in terms of polyphenol oxidase(PPO),peroxidase(POD) activity,cell membrane permeability and respiration rate at different storage temperature.Results showed that PPO and POD activities,respiration rate and ethylene production were restrained effectively at low temperature,for 'guiwei' Litchi,the relative enzyme activities relating to browning was lower,as well as the respiration.
