| 摘 要： | 甘薯是西部地区尤其是四川省主要的农作物之一，其块根和茎叶均含有丰富的营养成分，目前对甘薯的加工多集中于甘薯淀粉的利用，而对其多种功能成分利用还很不够．综述了甘薯的营养价值及其中保健成分的研究现状，对其进一步的开发提出了建议。

| Abstract: | Sweet potato is one of the major crops in southwest China especially in Sichuan province. A large number of nutrient components have been discovered in its root, stem and leaves. Sweet potato starch has been paid much attention to nowadays but not other functional compounds. The nutrient and healthy functions of sweet potato found in recent years are summarized in this paper. Advice for further utilization is also given. |
