摘    要:对影响小麦面筋吸水率、黏度等品质指标检测结果的多种因素进行了分析与探讨,指出只有进一步完善全国粮食检验系统通用仪器、设备的定标以及国家标准。提高检测人员的专业技术水平,坚持实事求是的工作态度,才能保证检验结果的科学性和准确性。

Abstract:This paper analyzes on and probes into various factors influencing wheat gluten's hygroscopic efficiency, viscosity and other quality targets, and points out that only further perfecting the scaling of the general instruments and devices of the national grain examining system and the national standards, increasing the technical level of the detecting personnel, holding the working attitude of seeking the truth from facts can guarantee the scientificness and accuracy of the detecting results.
