| Abstract: | The antioxidant activities of 4 kinds of vegetables and 8 kinds of natural pigments were studied by DPPH. The results indicated that all of the treated vegetable and pigments had antioxidant activities, and the antioxidant activities for 3 kinds of vegetales and 6 kinds of natural pigments were higher. |
