金属离子对紫叶小檗色素稳定性的影响

摘    要:本文报道了几种常见金属离子对紫叶小檗色素稳定性的影响。结果表明:钠、钙、锌、铜、镁、锰、铝离子对紫叶小檗色素有增色,护色作用,铅离子对呈色无明显影响,但可加速色素的降解。铁、锡离子可使色素溶液变色。

Abstract:The effects of metal ion on stability of natural red pigment which extracted fromthe fruits of purple leaf barberry B. thunbergii Var. atropurpurea] are reported in thispaper. The results reveal that the metal ions Na+, Ca2+,Mg2+, Cu2+, Zn2+. Mn2+ andAl3+ have the function of colour increase and colour preservation. The metal ion Pb2+ hasno obvious effect on the color, but it can increase destruction of pigment. Fe3+ and Sn2+make the colour changing.
