摘    要:综述了国内外关于发酵法生产乳酸的现状,介绍了乳酸生产菌株筛选、诱变和基因工程育种及乳酸的发酵工艺的研究进展,并展望了废弃物作为原料用于乳酸发酵的前景。

Abstract:Advances in the technology of lactic acid fermentation was reviewed in this paper. The breeding,mutation and genetic engineering breeding of lactic acid strain,as well as the technologies of fermentation were introduced,and the outlook of fermentation with waste material was also proposed.
