| Abstract: | Advances in the technology of lactic acid fermentation was reviewed in this paper. The breeding,mutation and genetic engineering breeding of lactic acid strain,as well as the technologies of fermentation were introduced,and the outlook of fermentation with waste material was also proposed. |
