2008年份昌黎原产地葡萄酒理化特性的统计学分析

摘    要:选取代表葡萄酒品质的19项指标,构成了描述葡萄酒理化特性的体系。应用主成分分析法,将原有的19项指标综合成5项互不相关的复合指标,而且该5项指标所涵盖原有19项指标的信息量达到了97.694%,基本反映了原指标的大部分信息。系统聚类分析结果显示,表儿茶素或咖啡酸或阿魏酸或没食子酸或绿原酸、多酚、挥发酸或干浸出物或总酸或色度、pH值、鞣花酸等5项指标可以反映葡萄酒理化特性的绝大部分信息,可用于描述葡萄酒的理化特性。

Abstract:In this paper, a system including 19 indicators was selected to describe the physical and chemical characteristics of the wine. The 19 indicators were synthesized to 5 uncorrelated composite indexes through principal component analysis method to substitute original indexes;they could contain about 97. 694% of the information and could basically reflect most information of the wine. Systematic cluster analysis result showed that the five indicators such as epicatechin, or caffeic acid or ferulic acid or gallic acid or chlorogenic acid, polyphenol, volatile acid or dry extract or the total acid or color,pH, and ellagic acid, could reflect most of the physical and chemical characteristics of wine, and they Could describe the physicochemical characteristics of the wine.
