餐厨垃圾产乳酸酶解发酵工艺的优化

摘    要:餐厨垃圾含水量高且极易腐烂.在大中型城市,每天会产生大量的餐厨垃圾,这些餐厨垃圾会造成环境污染.寻求简单、环保、有效的餐厨垃圾处理途径正成为人们研究的重点.乳酸作为一种工业原料广泛运用于食品、医药、化工等领域.因此,进行了餐厨垃圾生产乳酸的研究.结果在纤维素酶、α-淀粉酶和蛋白酶作用下,通过正交实验法得到实验最佳条件为pH为5,固液比为1∶5,温度为47℃.并进行了驯化菌种乳酸发酵餐厨垃圾生产乳酸的研究.

Abstract:The kitchen waste was abtained from the diet dining generated during the cooking process waste and discarded food raw materials. In some medium-sized cities,the amount of kitchen waste generated is increasing dramatically, which can cause environmental pollution. It is becoming a focus of research that look for a simple, environmental and effective treatment approach of the kitchen waste. The lactic acid as an industrial raw material is widely used in food,pharmacy, chemical industry and other fields. Therefore, this paper studied production of lactic acid from kitchen waste. The results showed that optimum conditions for the lactic acid fermentation of kitchen waste were determined by orthogonal design as follows: pH 5, solid-liquid ratio 1:5 and temperature 47 ℃. The authors also studied lactic acid production from kitchen waste by fermentation using the domesticated lactic acid bacteria.
