冷冻干燥草菇有效导热系数的测定

摘    要:本文尝试以线热源探针法测定冻干草菇的有效导热系数随冻干压力的变化关系;并与基于实际冻干过程的拟稳态测定结果进行了比较;两种方法所得的结果相接近。基于上述测定结果,又计算了草菇冻干过程的升华阶段时间,均与实验结果吻合。文中还对两种测定方法的特点进行了比较,认为线热源探针法简便快捷,能较准确地测定冻干食品的有效导热系数,为深入研究冻干热质传递过程创造了条件。

Abstract:The thermal conduCtivities of freeze dried mushroom at pressure between 13.3pa and 133.3pa are determined by using the line source probe technique.The results are in agreement with the thermal conductivities calculated from the data obtained during the freeze drying processes.Meanwhile,the sublimation lime in freeze drying of mushroom are calculated based on these deterdrined results.The predicted values are reasonable compared with the experimental results.
