菠萝多糖脱色工艺的研究

摘    要:为提高菠萝粗多糖的纯度及品质.研究了粉末型活性炭和壳聚糖对菠萝粗多糖脱色的影响,采用正交试验确定了两种脱色剂最佳的工艺条件为:活性炭用量1.0%、脱色液pH值3.0、脱色时间0.5h,多糖回收率和色素吸附率分别为93.09%和86.5%;用壳聚糖脱色,而壳聚糖用量5%,脱色时间0.75h,脱色温度45℃,多糖回收率和色素吸附率分别为95.23%和74.3%.

Abstract:In order to improve the purity and the property of the pineapple crude polysaccharide. The effects of powdered actiearbon and chitosan on decolorizing of pineapple crude polysaccharide were studied. By using orthogonal test, the optimum process conditions were reached as: when the amount of acticarbon was 1.0%, pH value of solution was 3.0 and the decolorizing time was 0.5 hour, the recovery rate of polysaccharide and the adsorption rate of pigment were 93.09% and 86.5 %, respectively; when using chitosan to decolorize, the amount of chitosan 5%, the decolorizing time was 0.75 hour and the decolorizing temperature was 45℃, recovery rate of polysaccharide and the adsorption rate of pigment were 95.23% and 74.3%, respectively.
