摘 要: | 本试验应用高能电子及紫外线辐射,对果胶酶产生菌Asp.3.396进行诱变选育,经不同辐射剂量辐照后,初步筛选出8.7、uv5、12—1等产酶性能良好的产量变异株。该变异株所产果胶酶,对果汁澄清效果良好,为果胶酶生产菌的优良菌株。同时,经高能电子及紫外线辐射,诱变筛选出2.8—2等白色孢子形态变异株,经传代试验结果表明,变异株白色孢子突变性状稳定。该变异能改善酶液色泽,符合工艺要求:试验还证明,各菌株间所产生果胶酶,对不同果胶的酶解能力,存在着一定的差异。
