| 摘 要： | 通过对地处青藏高原泊中县脑山地区菜籽中蛋白质含量的及提取条件研究表明，pH＝10．5的碱性条件是提取蛋白质较适宜的环境，其中可消化的蛋白质可达37．56％，所提取蛋白质可达18．96％。

| Abstract: | The protein content and extract condition of dregs of rape in remote mountains region of Qinghai-Tibet plateau were studied.The results showed:The medium condition of extract protein is alkaline of pH=5.The content of digestible protein is 37 56% and extracted protein is 18 96%. |
