小麦粉降落数值与破损淀粉含量及小麦含芽率的关系

摘    要:采用含芽率不同的小麦和破损淀粉含量不同的粉样分别做降落数值实验。实验结果表明:小麦粉降落数值与小麦含芽率呈负相关关系,小麦含芽率越大,降落数值越小;小麦粉的降落数值与破损淀粉含量呈显著的负相关关系,破损淀粉含量越大,降落数值就越小。

Abstract:With different bud rate and different damaged starch content,the descent experiment are carried out respectively,and the result show that the descent amount of the wheat-powder is negatively correlative with the bud rate and so is with the damaged starch content.The more the bud rate is and the more the damaged starch content,the less the amount of descent wheat is.
