摘    要:介绍国内外冰淇淋生产现状和发展趋势。总的趋势是冰淇淋生产持续增长;产品向天然保健功能化发展;生产工艺与设备趋向高度机械化、自动化;新技术的普遍推广,新的原辅料的使用,建立质量控制体系等。

Abstract:This article is about the current production state and tendency of ice cream in the world.The general tendency is as follows:the production capacity steadily increases;Ice cream turns to naturally healthy and functional food;the process and equipments get highly mechanized and automatic;the application of new technology is widespread,new stocks and adjuncts are widely used.
