| 摘 要： | 对叶子花色素的理化性质进行详细的研究，结果表明该色素溶解性好，耐热性尚好，还原剂、食品添加剂、金属离子（除Al^3 ,Fe^3 ）对色素无不良影响。

| Abstract: | In the paper Bougainvillea were use as raw materials.They were immersed with different impregnant and then pigment was extracted.The characters of pigment such as dissolving,anti-heat,anti-reducing agent and so on were research.Several frequently used additives in food were added and the steadiness of pigment was studied,too. |
