摘    要:本文采用气相色谱质谱联用仪(GC/MS)对采集于列车餐车的食用油烟雾样品进行全谱分析,发现样品有66种化合物,包括烃类、卤代烃类、醇酚醚类、醛酮类、羧酸及衍生物类、芳稠环杂环类和胺类等七类,其中一些化合物如芳杂环化合物、卤代烃和胺类等具有毒性作用

Abstract:Component analysis of edible oil fume in train's diner was carried out by gas chromatogram and mass spectra ( GC/MS). Results showed that in samples of oil fume there were 66 organic compounds, including hydrocarbons,halogenated hydrocarbons, alcohols, phenols,ethers, ketones, carboxylic acids and derivatives, amines, aromatic compounds and heterocyclic compounds, etc. And some of them were found toxic, such as amines, heterocyclic compounds halogen hydrocarbons and BHT, etc.
