| 摘 要： | 2007年5月至2007年9月,在广西沿海一个大型海水养殖场开展南美白对虾(Litopenaeus vannamei)养殖危害分析及关键控制点(HACCP)管理体系的生产应用研究.根据HACCP的基本原理和步骤,对整个南美白对虾养殖过程进行危害分析,确定了水体、虾苗、饲料和药物4个养殖关键控制点,并制定相应的关键限值、监控措施以及超过关键限值时的纠正措施,使各关键控制点处于人为控制之下.实施HACCP后,试验养殖场生产的产品各项指标均符合出口食品卫生标准.
