Abstract:The new strain-Tu-3, which can be used in brewing soy and vinegar, is produced by using the hyphae parasezual hybridization from Aspergillus orgzae 3.042 and Aspergillus niger UV-11. The result shows that the activity for neutral proteinase of Tu-3 leaven grown in a triangle bottle reaches 5 760 unit/g, and the glucoamylase reaches 9 900 unit/g. Compared with 3.042, the activities for proteinase and glucoamylase from Tu-3 were increased by 19% and 204.6% respectively. Other enzymes are also increased in different contents.
