应用麸曲和大曲相结合生产酱香型白酒

摘    要:在传统的大曲酒生产工业中,应用大曲和河内白曲、生香酵母、南阳温室酵母代替部分大曲,进行酱香型白酒的生产试验,提高了原料出酒率,且酒质较稳定,经济效益显著,并对大曲、麸曲生产的新酒及贮存一年以上的陈酒进行了品评及理化分析,取得了令人满意的效果。

Abstract:This Paper discussed the production of Maotai-flavour type liquors with Dequ-Fuqu combined process. and carried out the taste test and analysis of newly preduced and one year storaged white spirits respeively.The results were statisfactory.
