桑叶提取物对食用油脂抗氧化作用研究

摘    要:采用不同方法提取桑叶中的抗氧化物质,以食用菜油作底物,采用碘量法研究桑叶提取物的抗氧化作用。结果表明,微波乙醇提取物抗氧化作用最强,其作用与合成抗氧化剂BHT相当,柠檬酸对桑叶提取物有协同抗氧化作用。

Abstract:A research was conducted on anti-oxidative activity of mulberry leaves extract on rape seed oil. The anti-oxidative activities of the extract were measured by rape seed oil as substrates. The results showed that mulberry leaves extract with the method of microwave-alcohel was the highest anti-oxidative activity in the several extracts, which is nearly equal to BHT activity. When citric acid was mixed with the extract, the mixture showed better synthesizing the effect.
