摘    要:论述了植物油氧化稳定性的主要影响因素和植物油氧化机理;分类介绍了测定油脂氧化稳定性的方法和评价指标;综述了有关植物油氧化稳定性的研究新进展,旨在为更好地研究植物油氧化稳定性提供参考。

Abstract:In this paper,the main influencing factors of the oxidative stability of vegetable oils and the oxidation mechanism of vegetable oils were discussed,the test methods and evaluation indicators of oxidative stability of the oil were classified and introduced.This paper revies the latest progress in the research of the oxidative stability of vegetable oils,aiming to provide references for better stydying the oxidative stability of vegetablel oils.
