摘    要:通过粗脂肪、多糖和蛋白质及总灰分的含量测定,对松茸菌丝体在不同培养基中生长所积累的营养成分进行了比较分析.结果显示,各培养基中松茸菌丝体粗脂肪、多糖和蛋白的含量分别在1.17%-3.05%、16.19%-28.16%和4.17%-5.32%之间,其中改良的MMN培养基的菌丝体营养成分含量最高,分别为3.05%、28.16%和5.32%,其次为PDA培养基.不同培养基中菌丝体总灰分的百分含量在5.45%-12.10%之间,其中PDA综合培养基菌丝体的总灰分最多,为12.10%,浜田培养基和改良的MMN培养基培养出的菌丝体总灰分含量较低,分别为5.45%和6.07%.结果表明,改良的MMN培养基对菌丝体的营养成分富集较好.

Abstract:The accumulative contents of crude fat,crude polysaccharides,protein,and total ash of Tricholoma matsutake in different medium were compared and analyzed in this study.The results indicate that the recovery rate of crude fat and polysaccharides and protein contents are 1.17%-3.05%,16.19%-28.16% and 4.17%-5.32% respectively.The mycelium grown in MMN medium contain the highest nutritional ingredient,which are 3.05%、 28.16% and 5.32%,and in PDA medium is second.Total ash content of mycelium in different medium are at 5.45% - 12.10%, and mycelium in PDA culture medium contain the most ash, which is up to 12.10%. Mycelium in MMN medium contain lower total ash, which is 6.07%. The results show that the modified MMN medium is better for the nutritional enrichment of T. matsutake mycelium.
