早熟中华绒螯蟹雄蟹性腺指数、性腺生化成分及脂肪酸组成变化

摘    要:采用生化及气相色谱的方法研究了早熟与正常中华绒螯蟹雄蟹性腺指数、性腺生化成分及脂肪酸组成,结果表明:早熟雄蟹性腺指数为4.42±0.96,而正常雄蟹性腺指数为3.09±0.67,显著低于早熟雄蟹的性腺指数(P<0.05);生化成分组成中,早熟蟹性腺的水分含量为70.26n-%,显著低于正常蟹,而总脂含量为3.96%,显著高于正常蟹(P<0.05),蛋白、碳水化合物、甘油三酯、胆固醇和磷脂含量在两种性腺中均未见显著差异(P>0.05);脂肪酸组成中,饱和脂肪酸(SFA)含量最多的均为16∶0,二者含量比较接近无显著差异(P>0.05),并且SFA均在27%稍多,二者无显著差异(P>0.05).单不饱和脂肪酸(MUFA)含量最高的均为18∶1n-9,早熟雄蟹性腺含量略高为24.04%,但与正常蟹间无显著差异(P>0.05);而早熟雄蟹性腺的18∶1n-7、20∶1n-9和MUFA含量均显著高于正常蟹(P<0.05).多不饱和脂肪酸组成中,两种蟹性腺的18∶2n-6含量非常接近,均在7.0%左右,虽然正常雄蟹性腺的20∶4n-6(ARA)、20∶5n-3(EPA)、22∶6n-3(DHA)、PUFA、n-3PUFA、n-6PUFA和HUFA含量均高于早熟蟹,但仅有后二者存在显著差异(P<0.05).

Comparison of GSI,Gross Biochemical and Fatty Acid Composition in Male Gonads Between Normal and Precocious Chinese Crab,Eriocheir Sinensis

Abstract:In this study,GSI,Gross Biochemical and Fatty Acid Composition were investigated in Male Gonads of Normal and Precocious Chinese Crab,Eriocheir sinensis.The gonado-somatic index(GSI)of normal male gonad was significantly lower than that of precocious male.For gross biochemical composition,the moisture content of precocious male gonad was significantly lower than that of normal male,but the total lipid content was contrary,no significantly difference was observed in the crude protein,total carbohydrate,Triacylglycerol,Cholesterol and Phospholipids content.For fatty acid composition,the content of 18:1n-7、20:1n-9and MUFA was significantly higher in precocious gonad than in the normal,on the contrary,the content of n-6PUFA and HUFA was in the former was significantly lower than in the later.
