鲜芒果不同状态下物质含量动态研究

摘    要:通过抗衰物质SOD、POD、脯氨酸,营养物质蛋白质、黄酮、Vc,糖类物质还原糖、可溶性糖、总糖的含量变化,对鲜芒果的果实发育大小、着色、逆境、保鲜的动态变化进行了研究,结果表明:1)SOD各状态下活性低、变化小;还原糖除保鲜外其他3种状态下也含量低、变化小;蛋白质在发育和保鲜状态下含量低、变化小。2)其他抗衰、营养、糖类指标在不同的状态下均是或高或低、或强或弱的波动与激烈变化,并呈现各具特点的规律。

Abstract:Through researching the content changes of anti-aging substances like SOD, POD, proline, nutrients like protein, flavonoids, VC, and carbohydrate like soluble sugar, reducing sugar, total sugar, dynamic changes of fresh mango fruit development in size, color, adversity and keeping fresh were studied, the results show:(1) under different conditions SOD has low activities, small changes. Reducing sugar also has low content and small changes under other three states except preservation. In development and preservation condition, protein has low content and small changes. (2) Other anti-aging substances, nutrients, carbohydrates fluctuate and change drastically and present the characteristics of regulations.
