| 摘 要： | 研究了几种还原剂对高山花椰菜多酚氧化酶(PPO)活性的影响.结果表明:150 mg/L的L-半胱氨酸、200 mg/L的抗坏血酸、150mg/L的亚硫酸钠可分别抑制PPO活性的91.7%、79.2%和83.2%,其中L-半胱氨酸是对PPO抑制效果最好的还原剂,L-半胱氨酸的添加量应以500mg/L为宜.

| Abstract: | The influence of reducers on polyphenol oxidase(PPO) in high mountainous cauliflower were studied.The results showed that : activity of PPO was decreased 91.7%,79.2% and 83.2% by the inhibity of L-cysteine(150 mg/L),ascorbic acid(200 mg/L) and sodium sulfite(150 mg/L).Among them the action of L-cysteine was most significant.The suitable concentration of L-cysteine was 500 mg/L. |
