艾蒿色素的提取方法及其稳定性研究

摘    要:以天然野生艾蒿为实验材料,从色素的提取方法、稳定性测试及提高色素稳定性的措施三方面进行研究.结果表明:用物理方法提取其综合效果较好.该色素对光照稳定性差;溶液在酸性条件下较稳定,pH>7.0时色素会受到破坏;金属离子的存在对其稳定性有严重影响,加入抗坏血酸可使其稳定性提高.

Abstract:Natural mugwort was taken as experiment material. The extraction method of green pigment from mugwort and the stability of mugwort pigment were studied. The results showed the extraction of pigment with the physical method proved better. The pigment was not stable to light and its stability weakened in pH <3.9 or pH > 7.0. When metal ion Zn2+, Fe2+, Cu2+were added, the stability of the pigment was seriously affected .Vc could greatly improve the stability.
