雪枣营养成分分析及评价

摘    要:对雪枣的水分、总糖、总酸、维生素C、总黄酮、环磷酸腺苷等营养成分及功能性成分进行了分析测定,并与山东本地的金丝小枣进行比较分析。结果表明,雪枣中含水73.35g/100g、总糖26.03g/100g、总酸0.26g/100g、维生素C0.385g/100g、总黄酮185mg/100g、环磷酸腺苷3.5mg/100g,具有重要的应用开发价值。

Abstract:We analyzed and evaluated the nutritional ingredients in Snow Jujubewater,total sugar, total acids, vitamin C, flavonoids and cyclic adenosine-3', 5'-monophosphospate (cAMP), and compared them with those in Jinsi Jujube, a Shandong local fruit. The results showed that water 73.25 g/100 g, total sugar 26.03 g/100 g,total acids 0.26 g/100 g, vitamin C 0. 385 g/100 g, flavonoids 185 mg/100 g and cAMP 3.5 rag/100 g were include in Snow Jujube, which therefore has significant development and application values in the production of food and medicine.
