快速澄清刺梨汁的研究

摘    要:研究了JA2对刺梨汁的快速澄清作用,测定了经JA2澄清果汁的主要成分变化。结果表明:(1)影响澄清效果的主要因素是果汁的pH值、果汁的浓度和JA2的剂量。(2)经澄清的刺梨汁其透光率可达95%以上;可溶性固形物和总酸含量保持不变;Vc和SOD的损失都小于2%;易使果汁产生二次浑浊和褐变的果胶和单宁类物质的减少率分别为100%和40%。

Abstract:JA2s settling effect on the juice of Cili (Rosa Roxburghii Traff) is investigated and the change in main components of the settled juice is determinated. The results show that (1) the primary factous affecting settlement are the PH value and concentration of the juice and the dosane of JA2 used; (2) the transparency of the settlid juice is over 95%, the contents of soluble solid matters and to tal acids remain unchanged, the losses of Vc and SOD are below 2%, and the removal rates of pectin and tannin which will cause the secondary precipitation and browning are 100% and 40% respectively.
