藻红蛋白与胶体形成超分子复合物的稳定性研究

摘    要:初次报道了B-藻红蛋白(B-PE)分别与海藻酸钠和明胶形成超分子复合物的稳定性研究。通过采用可见吸收光谱和差示扫描量热法,结果显示B-PE在水凝胶溶液中不仅保持其原有构象,并具有良好的稳定性。而且,明胶包埋B-PE的效果要优于海藻酸钠,可使B-PE的光稳定性由20.2%分别提高到62.1%和37.8%;热变性温度由57.6℃提高到83.0℃和71.3℃。共振光散射法(RLS)的结果进一步证实,B-PE与凝胶产生了强烈的RLS信号,且与凝胶的浓度在一定范围内呈良好的线性关系。说明B-PE与凝胶之间通过非共价键形成了超分子复合物,提高了B-PE的稳定性。

Stability of Supramolecular Complex Formed by B-phycoerythrin and Colloids
Abstract:The stability of supramolecular complex formed with B-phycoerythrin (B-PE) and gel including sodium alginate and gelatin was firstly studied. The results showed B-PE not only retain former conformation, but also have good stability in the gel by absorption spectra and differential scanning calorimetry. Furthermore, gelatin possessed of better effect than sodium alginate to embed B-PE, which made the photostability of B-PE increased from 20.2% to 62.1% and 37.8%, and the thermal stability was from 57.6℃ to 83.0℃ and 71.3℃, respectively. The result of resonance light scattering (RLS)was more elucidated that the intense RLS value was occurred between B-PE and gel, and had good linear relationship between the RLS intensity and the concentrations of gel. It was indicated that B-PE and gel formed supramolecular complex by non-covalent bond, so the stability of B-PE was enhanced.
