| 摘 要： | 目的:从炮仗花中提取一种橙黄色色素,并对炮仗花色素的提取方法,提取剂的选择及其理化性质进行研究.方法:炮仗花色素提取的最佳工艺是以95%乙醇为浸提液.结果:炮仗花对光和热有一定的耐受性、稳定性.结论:食盐、蔗糖、葡萄糖等食品添加剂的加入对色素影响较小,炮仗花色泽有一定的耐碱、耐氧化能力,但耐酸、耐还原能力较弱.几种金属离子对该色素的色泽无不良影响.

| Abstract: | Objective: To extract an orange pigment from fire-cracker vine and analyze the extraction method,the selection of extraction agent and its physical and chemical properties.Methods: The best technique to extract its pigment is to use 95% ethanol as the agent.Results: The fire-cracker vine certain tolerance and stability to light and heat.Conclusion: Food addictives such as salt,sugar and glucose would not affect the pigment.It is alkali-resistant and oxidation-resistant,but with a weak resistance to acid and... |
