炮仗花色素的提取及理化性质研究

摘    要:目的:从炮仗花中提取一种橙黄色色素,并对炮仗花色素的提取方法,提取剂的选择及其理化性质进行研究.方法:炮仗花色素提取的最佳工艺是以95%乙醇为浸提液.结果:炮仗花对光和热有一定的耐受性、稳定性.结论:食盐、蔗糖、葡萄糖等食品添加剂的加入对色素影响较小,炮仗花色泽有一定的耐碱、耐氧化能力,但耐酸、耐还原能力较弱.几种金属离子对该色素的色泽无不良影响.
