石斑鱼肌肉氨基酸组成的初步研究

摘    要:本文测定了花点石斑鱼和青石斑鱼肌肉中18种氨基酸的含量。测定结果表明:石斑鱼肌肉中氨基酸含量较高,花点石斑鱼肌肉中氨基酸总含量为764.98mg/g,青石斑鱼的为743.78mg/g,这两种石斑鱼肌肉的氨基酸总舍量中,人体的8种必需氨基酸含量之和分别为40.87%和41,99%;谷氨酸、天门冬氨酸,精氨酸、丙氨酸和甘氨酸等5种氨基酸系的鲜味物质的含量之和分别为45.03%和44.37%.石斑鱼肌肉所含必需氨基酸的比值与人体所需氨基酸的组成模式比较接近.所以,对人体来说,石斑鱼肌肉是一种营养价值较高的鲜美的蛋白源.最后,本文提出了石斑鱼必需氨基酸的组成模式。

Abstract:This article reports a measurement of the amount of 18 different kinds of amino acids (glutamic acid,aspartic acid,lysine,leucine, arginine,alanine,glycine,valine,isolcucine,threonine,phenylalanine, serine,proline,tyrosine,methionine,histidine,cystine and tryptophan) in the muscle of Epinephelus maculatus and E.awoara.The results of the measurement indicate that,the amount of amino acids in the muscle of the above grouper is comparably high.The total amoumt is 764. 98mg/g and 743.78mg/g respectively.The amount of the 8 essential amino acids for human body together account for 40.87% and 41.99% of the total amount of the amino acids in the muscle of these two groupers. The amount of the five tasty amino acids (glutamic acid,aspartic acid, grginine ,alanine and glycine ) together account for 45.03% and 44.3% of the total amount of the amino acids.The ratio of the amount of the essential amino acids in the muscle of grouper is close to the component formula of essential amino acids for human body.Therefore,The flesh of grouper is a protain of delicious tasteand higher nutritonal value as well.This article reports the component formula of essential amino acids of grouper.
