摘 要: | 采用纯大曲法,AADY、糖化酶法,AADY、大曲、糖化酶混合法三种方案,通过对发酵温度和成品、半成品理化分析对比,认为AADY、大曲、糖化酶混合法为最佳方案,出酒率由原来的30 % 增至45 % ,且酒质尚好。

Application of TH-AADY on the Production of Longquan Daqu Liquor |

Abstract: | Three methods,ti.e.s pure Daqu,AADY and Carbohydrases,were used.After physical and chemical analyses and comparison in the aspects of fermentation temperature,product and semi processed product,the optimum condition is the last,for rate of production went up from 30% to 45%.Futhermore,the quality of the liquor is good. |
