| 摘 要： | 用苯酚-硫酸法测定水溶性膳食纤维——聚葡萄糖的含量，通过正交实验确定最佳显色和水解条件．实验结果表明该方法简便易行、结果稳定可靠，用于食品中水溶性膳食纤维聚葡萄糖含量的测定结果令人满意．

| Abstract: | A simple and fast analytical method for determination of polydextrose was developed based on the phenol - sulphate acid spectroscopy. The conditions for determination of polydextrose were optimized by orthogonal test. Results show that the method is accurate and reproducible, which is suitable for the analysis of the soluble dietary fiber--polydextrose content in food. |
