| 摘 要： | 本文从促进褐变的POD，PPO酶活性，膜保护方面的SOD酶活性和MDA含量，板栗的营养成分和Pb,As含量四个方面分析了温州地区6个主要品种的品质和贮藏加工性能指标，结果表明永荆3号和永荆5号可作为菜用及加工的理想优良品种。

| Abstract: | This paper investigated the activities of POD, PPO and SOD, the contents of nutrient gradients, MDA, Pb and As.The results shown that the breeds of Yong jing 3 and Yong jing 5 were the ideal breeds for eatables and processing. |
