水葫芦总黄酮的提取及其抑制油脂过氧化和清除自由基作用研究

摘    要:本研究从水葫芦茎部提取了黄酮类物质,通过红外光谱和颜色反应对总黄酮进行了性质分析,并探讨了水葫芦茎部总黄酮的抗油脂过氧化作用以及清除羟自由基的作用.结果表明:水葫芦茎部总黄酮对猪油有明显的抗氧化作用,其抗氧化性强于柠檬酸.总黄酮提取液对Fenton体系产生的.OH自由基有较好的清除作用.

Abstract:The flavonoids,which were extracted from water hyacinth,were characterized by FTIR and some reactions of qualitative analysis.The antioxidant activity and the scavenging free radical property were also investigated.The results suggested that the extracted flavonoids had an envident oxidation resistance to lard oil,which was stronger than citric acid.Besides,it also had a perfect scavenging effect on hydroxyl free radical by Fenton reaction.
