以新鲜椪柑为原料,采用复合脱苦、酒精发酵、醋酸发酵等工序,研究脱苦型椪柑果醋生产工艺.在超声波辅助活性炭脱苦的基础上,应用β-环糊精对椪柑果汁进一步脱苦,并运用单因素实验与Box-Behnken设计(BBD),对脱苦后果汁的醋酸发酵工艺条件进行优化.实验结果表明,应用复合脱苦技术后,脱苦率可达74.37%,椪柑果醋醋酸发酵工艺的优化条件为醋酸菌接种量10%(mL),发酵温度33 ℃,摇床转速120 r/min,发酵时间6 d.该条件下,100 mL果醋中总酸实测值为5.52 g,所得椪柑果醋色泽鲜亮,苦涩感少,酸味协调.  相似文献

经土壤分离、纯化、筛选到2株耐高酸、高渗透压、高含水量生长环境、菌体蛋白含量40%以上的菌株,经鉴定为产朊假丝酵母(1号)、黑曲霉(2号)。通过混合发酵果渣结果表明,果渣中果胶、高酸高糖被转化,蛋白质含量大大提高。该菌株适合应用于大生产。  相似文献

黑加仑又称黑豆蜜,系虎耳科科茶藤属植物黑醋栗(Ribes nigrum h.)的浆果.其果汁富含维生素、有机酸、糖、色素及各种微量元素,已广泛应用于饮料、酒、糖果等食品工业。而黑加仑果渣却未被利用。经研究证明其果渣富含色素,笔者以黑加仑果渣为原料,经提取,精制得到紫红色粉末(或浓缩汁),收率约为1%,此法,工艺简单、成本低、收率高,适合于工业化大生产。  相似文献

以青海贵德特产的软梨为原料,利用糖化低温发酵生成酒精度5%—8%的果酒后,再经重复发酵制成软梨果醋.通过在软梨汁中添加果胶酶,淀粉酶和糖化酶进行酶解处理,解决了软梨汁中果胶不利于发酵和原料利用率低的问题,添加适量增香酵母和乳酸菌进行发酵,增加了软梨果醋中酯类和不挥发酸的含量,使制得的软梨果醋风味纯正,并具有特有的软梨香、脂香和水果香.  相似文献

为确定不同种类的醋酸菌对山草莓果醋品质的影响,以山草莓为原材料,接种酵母菌进行酒精发酵,再用不同品种的醋酸菌进行醋酸发酵后,酿造制成山草莓果醋.对山草莓果醋的酒精度、可溶性固形物、总酸和DPPH消除率进行测定,并做出感官评价.结果表明:不同品种的醋酸菌对山草莓果醋的理化指标有一定影响,本实验中使用沪酿1.01号醋酸菌酿造的山草莓果醋的酒精度为0.80%、可溶性固形物质量分数为2.5%、总酸质量分数为4.78%、DPPH消除率为36.68%,达到了维生素C DPPH清除率的39.1%,明显高于其他实验组.  相似文献

以枇杷为主料,花、果、菜为辅料配制复合果汁,采用正交设计的方法进行研制和精选,对最佳配方的单一果汁与复合果汁进行保鲜过程中的物质变化研究.结果表明:活性物质SOD、POD 鲜汁高,之后急剧下降;抗性物质黄酮、脯氨酸为低-高-低的变化趋势;营养物质糖和pH 值相近层次呈平稳变化.  相似文献

安梨(Pyrus ussuriensis Maxim)含有较高的糖(13~17%)、酸(1.1~2.77)和果胶(1%±)等物质,但石细胞较多,且难以分离,适于加工果汁类品种。我们研制的果汁、果冻和果乳具有较好的外观品质和风味特征。这将益于提高安梨的经济价值,前景广阔。  相似文献

Language is a means of verbal communication. People use language to communicate with each other. In the society, no two speakers are exactly alike in the way of speaking. Some differences are due to age, gender, statue and personality. Above all, gender is one of the obvious reasons. The writer of this paper tries to describe the features of women's language from these perspectives: pronunciation, intonation, diction, subjects, grammar and discourse. From the discussion of the features of women's language, more attention should be paid to language use in social context. The Williston Basin is a significant petroleum province, containing oil production zones that include the Middle Cambrian to Lower Ordovician, Upper Ordovician, Middle Devonian, Upper Devonian and Mississippian and within the Jurassic and Cretaceous. The oils of the Williston Basin exhibit a wide range of geochemical characteristics defined as "oil families", although the geochemical signature of the Cambrian Deadwood Formation and Lower Ordovician Winnipeg reservoired oils does not match any "oil family". Despite their close stratigraphic proximity, it is evident that the oils of the Lower Palaeozoic within the Williston Basin are distinct. This suggests the presence of a new "oil family" within the Williston Basin. Diagnostic geochemical signatures occur in the gasoline range chromatograms, within saturate fraction gas chromatograms and biomarker fingerprints. However, some of the established criteria and cross-plots that are currently used to segregate oils into distinct genetic families within the basin do not always meet with success, particularly when applied to the Lower Palaeozoic oils of the Deadwood and Winnipeg Formation.  相似文献

理论推导与室内实验相结合,建立了低渗透非均质砂岩油藏启动压力梯度确定方法。首先借助油藏流场与电场相似的原理,推导了非均质砂岩油藏启动压力梯度计算公式。其次基于稳定流实验方法,建立了非均质砂岩油藏启动压力梯度测试方法。结果表明:低渗透非均质砂岩油藏的启动压力梯度确定遵循两个等效原则。平面非均质油藏的启动压力梯度等于各级渗透率段的启动压力梯度关于长度的加权平均;纵向非均质油藏的启动压力梯度等于各渗透率层的启动压力梯度关于渗透率与渗流面积乘积的加权平均。研究成果可用于有效指导低渗透非均质砂岩油藏的合理井距确定,促进该类油藏的高效开发。  相似文献

以AC-13级配为基础,将橡胶颗粒代替部分集料掺入混合料中,以低温弯曲试验为评价方法对不同橡胶颗粒掺量下沥青混合料的低温抗裂性进行研究,并引入应变能密度值对混合料的低温抗裂性进行综合评价.试验结果表明:橡胶颗粒沥青混合料试件的破坏微应变均超过2 300,满足冬寒区的技术指标;无论是否掺加橡胶颗粒,随着温度的下降,沥青混合料破坏时的最大弯拉强度增大,弯拉应变降低,劲度模量增大;弯曲应变能密度在胶粒掺量为1%左右时具有较大的弯曲应变能密度值,此时橡胶颗粒沥青混合料具有较好的低温抗裂性.  相似文献
