壳聚糖薄荷提取液复合保鲜剂对冷却肉保鲜效果的研究

采用壳聚糖和薄荷提取液作为复合涂膜剂,研究冷却肉的保鲜效果。结果表明,壳聚糖薄荷提取液复合保鲜剂能有效的降低冷却肉的细菌总数、挥发性盐基氮(TVB-N)和汁液流失率,控制样品pH值和硫代巴比妥酸反应物值(TBARS)的上升;并且随着薄荷提取液浓度的增加,保鲜效果略有增强,有效延长冷却肉保质期。     

咖啡淡奶质量的影响因素及控制

在咖啡阁等西式餐厅中,常常有咖啡奶茶等饮料。用于冲调咖啡和红茶的淡奶,受西方饮食文化的影响,其消费市场得到一定程度的发展与扩大,因此随着销售范围的扩大也就对淡奶产品的保质期的延长提出了更高的要求。虽然无菌包装系统的引进,可以部分地满足长保质期产品的要求,但对奶质量的影响因素及如何控制     

壳聚糖保鲜金秋梨的机理与效果探讨

本文以壳聚糖为主成份制成保鲜剂,以涂膜形式用于金秋梨保鲜的实验,探讨了壳聚糖保鲜膜的保鲜机理与效果。结果表明,壳聚糖保鲜膜能有效控制与调节金秋梨的呼吸作用、失水程度和化学成份含量变化,延长了金秋梨保鲜期。     

延长二氧化硫脲产品保质期的研究

对当前二氧化硫脲产品存在保质期短的问题进行分析,通过实验找出3种解决问题的方法,分别采用加入CaCO3微粒子、用冷冻液体A和质量浓度为5g/L过氧化氢溶液洗涤的方法对制备产品进行后处理,使二氧化硫脲保质期从3个月延长至24个月。     

花椒鸡丁预调理食品标准化加工工艺研究

花椒鸡丁是四川特有的风味凉菜。由于配方及加工工艺不同,菜肴质量差异较大。对花椒鸡丁的标准化制作工艺、包装和保质期进行研究,结果表明,将原辅料定量、制定严格的工艺流程,就可初步实现标准化生产;产品不添加任何防腐剂,经沸水浴杀菌30 min后,在常温条件下,保质期可达5个月。该研究结果既表现了预调理食品的特点,满足了现代大中型食品企业的加工工艺要求,又达到了开发新型川味预调理菜肴的目的。     

延长风味包保质期的方法研究

通过保存实验过程中样本感官、理化、微生物指标的变化，研究不同的加工工艺、包装材质对于酸菜包保存效果的影响，最终找到通过更换包装材质，将透明膜改为铝箔膜，可以达到延长酸菜风味包保质期的目的。     

改性壳聚糖离子交换膜制备研究进展

离子交换膜广泛应用于海水淡化、环境保护、化工生产和食品加工等领域,发挥着越来越重要的作用。壳聚糖具有良好的生物相容性、可降解性、无毒和化学及热稳定性,逐渐成为离子交换膜材料的研究热点。为克服其溶解性差等缺点,增加其应用范围,通常对壳聚糖进行改性,拓宽其物理化学性能。综述并分析了近年来基于改性壳聚糖用于阳离子交换膜、阴离子交换膜和单价选择性离子交换膜的研究状况,展望了改性壳聚糖在离子交换膜领域中的发展趋势。     

传统豆制品腐败菌污染及抑制研究进展

传统豆制品营养丰富,含水量大,但容易腐败变质,尤其是鲜食豆制品保质期短、运输储存均需低温冷藏。这严重影响了传统豆制品的产品品质与消费者的食用安全,限制了生产加工企业的产量及其产业化发展规模。确定传统豆制品腐败菌的来源和种类,分析不同腐败菌与豆制品品质变化的相关性,并采用安全有效的方法对其进行抑制,有效延长保质期,日益成为研究热点。从制作传统豆制品的原料大豆自身的种植土壤、种皮微生物与内源微生物,原料预处理、加热残留、加工辅料带入的安全隐患、设备清洗不彻底等生产加工过程的影响,以及贮藏环境影响等方面阐述了引起传统豆制品腐败变质的原因与途径。在原料存储和生产加工中,要进行高标准和严格的食品安全管理;总结了引起传统豆制品腐败的细菌和真菌等主要微生物的来源、腐败现象、污染的豆制品。传统豆制品在贮藏过程中,针对腐败菌群体系呈现出不同优势菌群的动态菌相变化,应用传统方法结合现代技术进行腐败菌的系统分离和鉴定,根据特定腐败菌进行抑制是有效延长保质期的关键;针对传统豆制品腐败菌采用物理杀菌、化学抑菌和生物防腐等抑菌方法及其抑菌机理的阐述。特别是针对不同的传统豆制品品质及腐败菌的特点,采用新型物理杀菌技术结合安全高效、抑菌效果好的生物方法,尤其是对微生物源抑菌剂的应用,为有效延长传统豆制品保质期提供独特的优势,以期为传统豆制品保鲜的新方向提供参考。     

壳聚糖涂膜结合冷藏对不同品种蓝莓品质的影响

以4个蓝莓品种"灿烂""巨蓝""顶峰"及"布里吉塔"果实为试材,研究0.5％壳聚糖涂膜结合4℃冷藏对蓝莓果实品质的影响.结果表明:与20℃贮藏相比,4℃冷藏显著降低了4个蓝莓品种果实腐烂率,延缓了果实可溶性固形物(SS)、可滴定酸(TA)、维生素C(Vc)及丙二醛(MDA)含量的变化,有效延长了保质期.0.5％壳聚糖涂膜降低了"灿烂""顶峰"与"布里吉塔"3个品种的果实腐烂率,延缓了4种蓝莓果实可滴定酸含量的下降,抑制了丙二醛累积,而对可溶性固形物和维生素C含量("巨蓝"除外)影响较小.

随着我国经济的快速发展和社会的不断变化,机械加工产品渗透人们的日常生活和工作中各个角落,它们的产品使用性能与组成的零件之间有着直接的联系。零件加工的质量好有利于提高机械产品的使用性能,并延长机械产品的使用寿命。其中,衡量机械产品加工质量好坏的标准有两个,分别是机械产品的加工精度和表面粗糙度。因此,本文的主要目的就是对机械加工中影响表面物理机械性能的因素进行分析和研究,并有针对性的提出了提高机械加工表面质量的工艺措施。     

Markedness and its Interpretation in Language Use

Language markedness is a common phenomenon in languages, and is reflected from hearing, vision and sense, i.e. the variation in the three aspects such as phonology, morphology and semantics. This paper focuses on the interpretation of markedness in language use following the three perspectives, i.e. pragmatic interpretation, psychological interpretation and cognitive interpretation, with an aim to define the function of markedness.

Lower Paleozoic oil relationships within Williston Basin, Canada

The Williston Basin is a significant petroleum province, containing oil production zones that include the Middle Cambrian to Lower Ordovician, Upper Ordovician, Middle Devonian, Upper Devonian and Mississippian and within the Jurassic and Cretaceous. The oils of the Williston Basin exhibit a wide range of geochemical characteristics defined as "oil families", although the geochemical signature of the Cambrian Deadwood Formation and Lower Ordovician Winnipeg reservoired oils does not match any "oil family". Despite their close stratigraphic proximity, it is evident that the oils of the Lower Palaeozoic within the Williston Basin are distinct. This suggests the presence of a new "oil family" within the Williston Basin. Diagnostic geochemical signatures occur in the gasoline range chromatograms, within saturate fraction gas chromatograms and biomarker fingerprints. However, some of the established criteria and cross-plots that are currently used to segregate oils into distinct genetic families within the basin do not always meet with success, particularly when applied to the Lower Palaeozoic oils of the Deadwood and Winnipeg Formation.     

低渗透非均质砂岩油藏启动压力梯度研究

理论推导与室内实验相结合,建立了低渗透非均质砂岩油藏启动压力梯度确定方法。首先借助油藏流场与电场相似的原理,推导了非均质砂岩油藏启动压力梯度计算公式。其次基于稳定流实验方法,建立了非均质砂岩油藏启动压力梯度测试方法。结果表明:低渗透非均质砂岩油藏的启动压力梯度确定遵循两个等效原则。平面非均质油藏的启动压力梯度等于各级渗透率段的启动压力梯度关于长度的加权平均;纵向非均质油藏的启动压力梯度等于各渗透率层的启动压力梯度关于渗透率与渗流面积乘积的加权平均。研究成果可用于有效指导低渗透非均质砂岩油藏的合理井距确定,促进该类油藏的高效开发。
