Summary Information on the sources of cadmium in food are presented and the effects of raised environmental levels of cadmium on the concentration of cadmium in plant based foods, fish and shellfish, meat and offals, and dairy produce are discussed. Information is also presented on normal dietary intakes of cadmium and how these intakes may be elevated by environmental pollution or atypical dietary habits. The estimation of dietary intakes of cadmium using data about extreme intakes of specific foods is described.The author wishes to thank the Ministry of Agriculture, Fisheries and Food for permission to publish this paper.  相似文献

In intensively populated countries efficient sewage treatment is essential to protect river quality. An inevitable by-product is sewage sludge which has to be disposed of safely and economically. Utilisation of sludge as a fertilizer of agricultural land is the most economic disposal route for inland sewage-treatment works and also benefits farmers by providing a cheap manure. Much of the cadmium in wastewater is concentrated into sludge which consequently contains higher concentrations of cadmium than soil does. It is impracticable to reduce cadmium concentrations in sludge below certain levels. When sludge is used on farmland rates of application must be controlled so that cadmium concentrations in soil never reach levels that could significantly contaminate food crops. Cadmium is a principal factor limiting the use of sludge on land. Nevertheless, it is a local problem since agricultural land in general receives more cadmium from aerial deposition and phosphatic fertilizers. The significance of accumulations of cadmium in soil depends mainly on its availability for crop uptake. Investigations are described which have attempted to identify and to determine the availability of forms of cadmium in soil. There is considerable research interest in cadmium in soil solution which is likely to be directly available for crop uptake. Another area of interest is the apparent disappearance of cadmium from sludge-treated soil. Soil analysis often cannot fully account for the cadmium added in sludge. Apart from the effect of soil conditions, especially pH value, crop uptake varies according to the particular crop examined. Highest concentrations of cadmium occur in tobacco, lettuce, spinach and other leafy vegetables. Using crop uptake data from field trials it is possible to relate potential human dietary intake of cadmium, on which hazard depends, to soil concentrations of cadmium, which can be controlled by regulating applications of sludge. This provides an objective basis for limits for cadmium concentrations in soils receiving sludge. Transfer of cadmium via farm animals to meat and dairy products for human consumption is thought to be minimal, even allowing for some direct ingestion of sludge-treated soil by the animals. Evidence from these and other investigations suggests that a loading rate limit of 5 kg Cd/ha (equivalent to a soil concentration of about 3.5 mg Cd/kg) affords adequate protection to the foodchain where sludge is used on agricultural land. More research work is needed to provide a basis for predicting the long-term availability of cadmium introduced to the soil in sludge.  相似文献

The increasing environmental and occupational exposure of populations to cadmium creates the need for biological indicators of cadmium exposure and toxicity. The advantages and disadvantages of monitoring blood cadmium, urinary, fecal, hair, and tissue cadmium, serum creatinine, beta 2-microglobulin, alpha 1-antitrypsin and other proteins, and urinary amino acids, enzymes, total proteins, glucose, beta 2-microglobulin, retinol-binding protein, lysozyme, and metallothionein are discussed. It is concluded that urinary cadmium, metallothionein and beta 2-microglobulin may be used together to assess cadmium exposure and toxicity.  相似文献

Natural selection tends to eliminate unutilized capacities because of their costs. Hence we ask how large are the reserve capacities by which biological capacities exceed natural loads, and how closely are related biological capacities matched to each other. Measured capacities (Vmax values) of small intestinal brush-border nutrient transporters are typically around twice their natural loads (dietary intakes of their substrates); the ratio is higher for a transporter of a hyperessential nutrient. Preliminary evidence suggests matching of capacities between different steps in carbohydrate metabolism, and between the intestine, liver, kidneys, and spleen. Symmorphosis - the postulated matching of capacities to each other and to loads - is a testable hypothesis of economic design, useful in detecting and explaining cases of apparently uneconomic design.  相似文献

Summary The health effects of human exposure to cadmium are discussed with emphases on intake, absorption, body burden, and excretion; osteomalacia in Japan; hypertension; and proteinuria, emphysema, osteomalacia, and cancer in workers. Elevated blood pressure has not been observed as a result of excessive exposures to cadmium in Japan or the workplace. Renal tubular dysfunction and consequent proteinuria is generally accepted as the main effect following long-term, low-level exposure to cadmium. Studies of workers show that proteinuria may develop after the first year of exposure or many years after the last exposure. Proteinuria and deterioration of renal function may continue even after cessation of exposure. The immediate health significance of low-level proteinuria is still under debate. However, there is evidence that long-term renal tubular dysfunction may lead to abnormalities of calcium metabolism and osteomalacia. The few autopsy and crosssectional studies of workers do not permit conclusions to be drawn regarding the relationship between cadmium exposure and emphysema. Retrospective and historical-prospective studies are needed to settle this important question. No conclusive evidence has been published regarding cadmium-induced cancer in humans. However, there is sufficient evidence to regard cadmium as a suspect renal and prostate carcinogen. Because of equivocal results and the absence of dose-response relationships, the studies reviewed should be used with caution in making regulatory decisions and low-dose risk assessments.  相似文献

Histological investigation revealed cadmium-induced lipofuscin formation in hepatopancreatic cells of the crustacean isopod,Idotea baltica. A comparison of lipofuscin induction by cadmium and by copper showed that cadmium has a weaker peroxidative action than copper. The effect of cadmium was reduced by the simultaneous presence of zinc, which on its own was ineffective in lipofuscin induction. A tentative explantation of the interactive effects of these materials is suggested.  相似文献

The effects of dosage and of cadmium pretreatment on the binding of cadmium in rat bile were studied. With increasing dose a higher cumulative biliary excretion of Cd was observed and a higher percentage of the Cd was excreted in a low-molecular-weight form. On the other hand, after cadmium pretreatment, a decrease in the cumulative biliary excretion of cadmium was observed but a greater percentage of that excreted into the bile was bound to high molecular weight compounds.  相似文献

Groups of mice were maintained for up to 78 weeks on tryptophan restricted, protein restricted and control diets. Plasma tryptophan levels were significantly reduced by both forms of dietary restriction. Brain serotonin levels were significantly reduced only in mice on the tryptophan restricted diet, but not for mice on the protein restricted diet. The protein-restricted diet contains less of the large neutral amino acids which compete with tryptophan to enter the brain. It is known that protein restriction and tryptophan restriction extend lifespan. The results presented here suggest that extension of lifespan and lowering of brain serotonin are not related.  相似文献

The study of the growth of Prorocentrum micans E. submitted to sublethal doses of cadmium demonstrated a high sensitivity of this Dinoflagellate to the polluant starting with concentration of 5 microgram/l. The uptake of cadmium was measured by pulse polarographic analysis of the filtered culture medium. Structural modifications, not apparent in living cells, are visible after fixation. The high sensitivity of Prorocentrum micans to cadmium, also its easy culture, makes it a suitable pollution indicator of this heavy metal.  相似文献

Urinary excretion of metallothionein was measured by radioimmunoassay in rats given drinking water containing 5 or 50 mg cadmium/l for up to 2 years. The metallothionein levels corresponded to the concentration of cadmium in the drinking water and increased linearly over the course of the study. These results demonstrate that urinary metallothionein is a sensitive biological indicator of oral cadmium exposure.  相似文献
