报道了山楂红色素的稳定性,受高温加热及强光照射时的变化,以及一些金属离子、有机酸、氧化剂、还原剂、糖类、食品添加剂对山楂红色素稳定性的影响。结果表明,山楂红色素在酸性条件下稳定,对于光有良好的稳定性,氧化剂、还原剂及抗坏血酸对色素有一定的降解作用;柠檬酸对色素有明显的增色作用;糖类、除Fe^3+、Sn^2+的金属离子及苯甲酸钠对色素的稳定性没有影响。  相似文献

通过实验,对橙汁果汁色素理化性质做了初步的探索,研究金属离子,氧化剂及还原剂,常用的食品添加剂,酸碱和光照对色素的影响,结果表明:金属粒子、低浓度的氧化剂和还原剂对色素的影响不大;不同食物添加剂对色素有不同的增色或消色作用;色素对光敏感,随着光照时间的增加稳定性减弱.  相似文献

以食用紫甘蓝菜为原料,用pH值为2的盐酸溶液浸提得到紫甘蓝色素.着重研究了蔗糖、柠檬酸、抗坏血酸、金属离子、氧化剂、还原剂对紫甘蓝色素稳定性的影响.结果表明:紫甘蓝色素水溶性好,在酸溶液中很容易被提取.该色素在酸性条件下对常用的食品添加剂蔗糖、柠檬酸具有较好的稳定性;金属离子Fe3+、Sn2+、氧化剂、还原剂对色素的稳定性影响较大.  相似文献

理论推导与室内实验相结合,建立了低渗透非均质砂岩油藏启动压力梯度确定方法。首先借助油藏流场与电场相似的原理,推导了非均质砂岩油藏启动压力梯度计算公式。其次基于稳定流实验方法,建立了非均质砂岩油藏启动压力梯度测试方法。结果表明:低渗透非均质砂岩油藏的启动压力梯度确定遵循两个等效原则。平面非均质油藏的启动压力梯度等于各级渗透率段的启动压力梯度关于长度的加权平均;纵向非均质油藏的启动压力梯度等于各渗透率层的启动压力梯度关于渗透率与渗流面积乘积的加权平均。研究成果可用于有效指导低渗透非均质砂岩油藏的合理井距确定,促进该类油藏的高效开发。  相似文献
