不同处理方法对白菜发酵酸度及亚硝酸盐含量的影响   总被引:3,自引:0,他引:3  
实验分析了加盐、加糖、漂烫等不同处理对白菜腌制过程中亚硝酸盐含量及酸度变化的影响。结果表明:在自然发酵过程中,漂烫处理对亚硝酸盐含量及酸度的影响最为显著;但加入老汤可更明显降低整个过程中的亚硝酸盐含量,且无亚硝酸盐含量高峰出现。  相似文献

本文对西宁市12种新鲜蔬菜沸水烫漂前后硝酸盐含量进行了分析测定。结果表明:烫漂处理后,有5种蔬菜硝酸盐含量下降,7种蔬菜硝酸盐含量上升。12种蔬菜末烫漂和烫漂处理间硝酸盐含量差异不显著(P〉0.05)。  相似文献

主要研究了苦菜采用微波处理后营养成分的变化情况,并与漂烫法进行比较.结果表明:叶绿素、糖、维生素C、蛋白质、钙的含量降低率(与新鲜苦菜相比)分别为:8.2%、27.5%、55.1%、2.2%、2.3%;而漂烫法5种含量的降低率分别为:46.9%、47.5%、99%、11.1%、16.1%.  相似文献

通过对市售4种18个样品腌制菜亚硝酸盐含量的调查分析,结果表明,腌制菜产品的亚硝酸盐含量与蔬菜的品种不同而存在较大差异,以萝卜类含量最多,其次是辣椒类和白菜类,含量最少的是黄瓜类.18个样品中有4个样品亚硝酸盐含量超标,超标率为22%.低pH值和乳酸菌能抑制肠道菌的数量,降低亚硝酸盐含量.一定浓度范围的食盐对亚硝酸盐含量影响不大.研究结果将为人们的安全食用提供一定的理论依据.  相似文献

本文研究了酸菜中亚硝酸盐含量和 pH 值随腌制时间变化规律。结果表明,腌制后20天内,腌制品的亚硝酸盐含量出现峰值,腌制25天后亚硝酸盐含量基本趋于恒定。pH 值随腌制时间从4增至中性。当腌制酸菜时加入0.4g/kg 菜抗坏血酸(Vc),酸菜的亚硝酸盐含量降低,而且在腌制时白菜中的 Vc 损失较少。  相似文献

研究了通电加热烫漂对胡萝卜、油菜中维生素含量的影响,并与普通电炉加热进行了比较;研究了胡萝卜、油菜通电加热烫漂的最佳工艺条件.结果表明,随着烫漂时间的延长,胡萝卜中的β-胡萝卜素含量明显降低,油菜中维生素C的含量也明显降低;通电加热烫漂后的维生素含量明显高于电炉加热.而胡萝卜通电加热的最佳烫漂工艺为:烫漂时间为3 m in,颗粒尺寸为10 mm,料液比(质量比)为1∶4,电压为220 V.油菜通电加热烫漂的最佳工艺条件为:料液比(质量比)为1∶4,烫漂时间为0.5 m in,电压为220 V.  相似文献

本文利用ICS-2000离子色谱法对大白菜中的亚硝酸盐在不同状态下含量变化的研究.结果表明白菜中亚硝酸盐随时间增加而增加,加热后能够较大程度上降低蔬菜中亚硝酸的浓度,且该方法检测的NO2-浓度在0~2mg/L范围内有良好的线性关系(r=0.9999),最小检测值为0.0001mg/L,实样加标回收率在98.55%~101.61%之间.  相似文献

本试验以各种蔬菜:菠菜、芹菜、花菜、芦笋、土豆、大头菜、蒜苗中的过氧化物酶活性为研究对象:在不同温度下进行烫漂处理后其POD活力具有再生现象,于是确定在95°C下烫漂得到不同蔬菜的最佳烫漂时间分别为菠菜1min,蒜苗2.5min,芹菜3min,芦笋4min,青菜1.5min,大头菜1.5min,花菜2.5min,土豆3min;还进一步比较研究了添加柠檬酸、Na_2CO_3、CuSO_4等化学药品对蔬菜烫漂处理中POD活性的影响,结果用适宜浓度的Na_2CO_3(10 ̄(-5)M)或CuSO_4(4.0×10 ̄(-4)M)溶液烫漂处理具有护色和杀酶的协同效果。  相似文献

蔬菜纸是将新鲜蔬菜加工成糊状然后加人适当的调味料和粘结剂,再干燥轧制而成。它清脆可口,风味独特,深受欢迎。其加工技术如下:原料取鲜嫩不老化、无腐败变质、无农药污染的菠菜、胡萝卜为原料。清洗原料放入洗涤槽中,用流动清水进行充分洗涤,捞出沥干。切分菠菜切成10mm左右的段条,将梗和叶分开存放,胡萝卜切成10X10mm左右的小块。软化、冷却菠菜梗人沸水漂烫2分钟,叶漂烫0.5分钟,迅速投入凉水中冷却凉透,将胡萝卜投入沸水中漂烫4分钟后迅速投入凉水中冷却。拌料将海藻酸钠按0.4%的比例与切碎的菠菜、胡萝卜拌匀。均质用胶…  相似文献

结合中国科学技术大学的三学期改制,在夏季学期开设"化学科研基础训练"研究型实验课程。以"储存时间对蔬菜中亚硝酸盐含量的影响"实验项目为例,介绍该课程的教学流程以及教学中遇到的情况及经验总结。即采用盐酸萘乙二胺分光光度法,研究不同种类的蔬菜在不同储存时间下的亚硝酸盐含量。结果表明:新鲜蔬菜中的亚硝酸盐含量较低,其中根茎类蔬菜的亚硝酸盐含量要稍低于叶类蔬菜。此外,延长储存时间,蔬菜中亚硝酸盐含量均有不同程度的升高,尤其叶类蔬菜升高幅度较大。  相似文献

Language is a means of verbal communication. People use language to communicate with each other. In the society, no two speakers are exactly alike in the way of speaking. Some differences are due to age, gender, statue and personality. Above all, gender is one of the obvious reasons. The writer of this paper tries to describe the features of women's language from these perspectives: pronunciation, intonation, diction, subjects, grammar and discourse. From the discussion of the features of women's language, more attention should be paid to language use in social context. The Williston Basin is a significant petroleum province, containing oil production zones that include the Middle Cambrian to Lower Ordovician, Upper Ordovician, Middle Devonian, Upper Devonian and Mississippian and within the Jurassic and Cretaceous. The oils of the Williston Basin exhibit a wide range of geochemical characteristics defined as "oil families", although the geochemical signature of the Cambrian Deadwood Formation and Lower Ordovician Winnipeg reservoired oils does not match any "oil family". Despite their close stratigraphic proximity, it is evident that the oils of the Lower Palaeozoic within the Williston Basin are distinct. This suggests the presence of a new "oil family" within the Williston Basin. Diagnostic geochemical signatures occur in the gasoline range chromatograms, within saturate fraction gas chromatograms and biomarker fingerprints. However, some of the established criteria and cross-plots that are currently used to segregate oils into distinct genetic families within the basin do not always meet with success, particularly when applied to the Lower Palaeozoic oils of the Deadwood and Winnipeg Formation.  相似文献

理论推导与室内实验相结合,建立了低渗透非均质砂岩油藏启动压力梯度确定方法。首先借助油藏流场与电场相似的原理,推导了非均质砂岩油藏启动压力梯度计算公式。其次基于稳定流实验方法,建立了非均质砂岩油藏启动压力梯度测试方法。结果表明:低渗透非均质砂岩油藏的启动压力梯度确定遵循两个等效原则。平面非均质油藏的启动压力梯度等于各级渗透率段的启动压力梯度关于长度的加权平均;纵向非均质油藏的启动压力梯度等于各渗透率层的启动压力梯度关于渗透率与渗流面积乘积的加权平均。研究成果可用于有效指导低渗透非均质砂岩油藏的合理井距确定,促进该类油藏的高效开发。  相似文献
