高梁泡红色素及其稳定性研究

摘    要:对高梁泡红色素的提取,及其对光、温度、pH值、氧化剂、还原剂等稳定性进行了研究。结果表明,pH值对高梁泡红色素的影响明显;在酸性条件下,该色素对光和热有较好的耐受性,有一定的耐还原性,但抗氧化性较差。该色素属水溶性花青苷类色素,可作为新型天然食用色素加以开发利用。

Abstract:The paper deals with the extraction of red pigment from Rubus lambertianus Ser. and probes into the effects of light, temperature, pH value, oxide-reducing medium on the stability of the pigment. The results show that pH value affects the pigment stability, and when the pH is lowered in the range 1-4, the pigment possesses higher stability of light and heat, has good and poor resistance to the reductant and oxide respectively.The pigment belongs to water- solvent anthocyanins and can be used as a new type natural edible pigment.It is worthy of exploitation and utilization.
