| Abstract: | A method of extracting red pigment from Lanzhou's radish was studied as well as on the effect of light,heat,pH,several kinds of food additives and heavy metal ions on the stability of red radish pigment.The research provided academic basis for the use and exploitation of red radish pigment. |
