偏重亚硫酸钠对葡萄保鲜效应研究

摘    要:以葡萄重3%的偏重亚硫酸钠处理新鲜葡萄1天后,其Sod,Pod,Cat活性增高,膜脂过氧化受抑制,MDA不积累,细胞膜电导率也有一定增加,有机酸,抗坏血酸及糖等营养成分损失减少,表明偏重亚硫酸钠具有一定的保鲜效果。

Abstract:After treated with three percent of partial-double sodium sulphurous,the superoxide dismlitase,peroxidase and catalase activity of grape increased,the membrane lipid superoxidation was inhibited,MDA content decreased and the membrane permeability increased while there was only a slight reduction in the content of the organic acid,Vc and sugar.The experiment indicates that partial-double sodium sulphurous can prolong the storage time of grape.
